This is a sampler set of four Vintage French kitchen knives from Thiers, a city renowned since the 17th century for its knife-making. From left to right, they are the Ottoman-Style Kitchen Knife, a Traditional French Butcher's Knife, Marin-Style Kitchen Knife, and our French Bread Knife. We recently discovered a trove of forgotten kitchen knives, at various factories. They are all ‘brand new,’ decades-old beauties, cleaned up, and offered proudly by Garrett Wade. All four knives feature hardwood handles and should not sit in water. Hand wash and dry immediately. Not dishwasher-safe. Quantities of all our Vintage French Knives are very limited, so get them while they last.

The Ottoman-Stlye Knife has an unusual blade shape inspired, we think, by the historic Turkish Yatagan knife. The blade curves slightly forward at the top near the handle, and then tapers to a sharp point. With a narrow point end, and thin blade, this is an ideal fileting knife, but can pull double duty as an all-around utility blade. 10-1/2" overall length, with a 6" carbon steel blade. Three narrow brass pins affix a full-tang blade to the hardwood scales.

The French Butcher's Knife has an ergonomic grip and comfortable feel in the hand. This style has served French butchers for generations, so it will easily handle your tasks, like slicing chicken breasts for cutlets and cubing beef for stew. The carbon steel blade displays a "L'enfer" running devil trademark, an ironic reference to the historic Thiers factory district, "Le Creux de L'enfer" (The Depths of Hell). The dark-stained beech wood scales are affixed by aluminum pins. 5-1/2" blade with an overall length of 10-3/4".

The Marin-Style Knife is characterized by a wider, rigid blade affixed to hardwood handles, in this case, Rosewood. The scales have solid brass pins and are stamped with the famous Thiers trademark, Sabatier-Jeune. Carbon steel blades will discolor and stain with normal usage, giving the blade a lovely and unique patina. Carbon blades are easy to sharpen for the home cook, and outside of eBay, are hard to find.

The French Bread Knife is 13-1/4" long and has an 8-1/2"serrated stainless blade, that easily slices through dense bagels, crispy baguettes, flaky croissants, or your own fresh-baked loaf. Doubles as an all-around utility knife, with the serrations making easy work of starter cuts on tomatoes, cantaloupe, and peaches. Light and flexible, this knife features handsome two-tone brass washers and steel rivets to affix the rosewood handles.
