The 5¼" blade Skinning Knife, has a reverse curve that allows for sweeping arcs while cutting. The Utility Knife, with its 5½" blade, is good for all around kitchen butchery tasks. The cutaway near the bolster of the Filet Knife keeps the 6" blade thin and flexible for fileting meat or fish away from the bone. All three all have high carbon steel blades for max sharpness and dyed black European beech wood scales.

We recently discovered these beautiful historical knives, in Thiers, France, long renowned as one of the world’s greatest cutlery centers. These were hand-crafted decades ago, so slight variations make each knife one unique. Because these are truly vintage, we have limited quantities, and when our stock is gone, they will be gone forever. For care, hand-wash and dry immediately.
